Collaborators Sought for Wine Research Project

Winemakers in areas not too distant from Melbourne are being sought to collaborate in a wine research project.

Our hypothesis is that correlations exist between the colour of red and white wines as measured by transmission colorimetry. i.e. across the full visible spectrum, and other wine and grape characteristics, chemical, physical and sensory.

In order to test this hypothesis we need to measure small sample quantities of unfermented grape juice, wines during processing and wines as they age. The larger the number of varieties and ages measured, the more reliable and meaningful the results.

About 20-50ml of each sample is required for non-destructive instrumental measurement. Measurements would be made on-site at the winery. Given adequate preparation in advance, no more than one day would be required at any one site.

Anonymity and confidentiality would be preserved. Grapes and wines would be identified by variety, blend % (if applicable), region and age only. Although the results and conclusions would be published and made available to all participants, each individual winery's results would be discussed in confidence with the winemaker.

We believe the results will add to the knowledge base of the grape and wine industries and hopefully add to the technology available to growers and  producers to monitor and control processes and quality.

Our believe is, "If you can measure it, you can control it". Colour assessment in the wine industry has been largely been subjective, whether by judges, winemakers and consumers.  Instrumental colour measurement and assessment makes one of the sensory attributes of grapes and wines truly objective and provides an added means of control.
